How do you defend triple option in the “double wing” or “flexbone” look?

Well… I would say my initial reaction is to play a mix of UNDER and OVER with quarters. Call the field. Motion you can try to just play it – it’s really just giving you “2 backs” at that point so you should be good. If they are out leveraging you with motion then you could Roll weak c3 vs motion into the boundary and Roll Sky with field motion. Could also mix in BEAR with quarters and Roll cloud into the motion – that could be good. Mix in a corner blitz on key downs if the pitch is hurting you. Those would be some ideas.
